The Asian Secret to Breading

The next time a recipe calls for bread crumbs or crushed crackers, swap in the Asian breading, panko. "Panko is lighter and fluffier than regular bread crumbs," says Dave Lowry, author of The Connoisseur's Guide to Sushi. The consistency of panko bread crumbs means it covers more space for fewer calories—1 cup of regular panko has 160 calories per cup and Italian-style panko has 280 calories compared with 430 calories for 1 cup of bread crumbs.
