cups cubed cooked chicken

can (14 oz) Progresso® reduced-sodium chicken broth
1
can (11.5 oz) vegetable juice cocktail

can (15.5 oz) Green Giant® whole kernel corn, drained
1
cup Muir Glen® organic salsa (any flavor)
1
can (4.5 oz) chopped green chiles
1/4
cup chopped fresh cilantro
  • 1 In 3-quart saucepan, mix all ingredients except cilantro. Heat to boiling over medium-high heat.
  • 2 Reduce heat to low; simmer 10 minutes or until thoroughly heated, stirring occasionally. Stir in cilantro.

Expert Tips

Chicken contains vitamin B6, also called pyridoxine. Vitamin B6 is important for digesting proteins, plus it helps to keep hair and nerves healthy.

Soup is a great way to use leftover chicken. Make a double batch and freeze some in 2-cup amounts so it can be easily thawed and heated when needed.

Cilantro has a lively pungent flavor that some describe as slightly soapy. It's used often in Mexican, Indian and Indonesian dishes. Also called Chinese parsley, it's a key ingredient in pico de gallo (salsa).

I made this with Zatarain's Spanish Rice Mix. I made the rice according to the directions on the box. At first, I was going to have the rice as a side but then decided to actually mix it into the soup. Absolutely delicious!!! I thought it made the recipe! Loved it...so did my husband.

delish!! i made it for dinner tonight. i added the black beans and i used the rotel tomatoes and chillies. i made this in the crockpot. i cooked the chicken in the crockpot with the salsa and then added the rest of the ingrediants 2 hours before i ate the soup. forgot to add the cilantro so i will add it to the warm ups.
