Zesty Chicken with Corn Salsa

teaspoons brown sugar

teaspoon ground cumin

boneless skinless chicken breasts (about 1 1/4 lb)

tablespoons olive oil

can (7 oz) Green Giant® whole kernel sweet corn, drained
1/2
small red bell pepper, chopped
1/2
small cucumber, seeded and chopped
1/2
cup Progresso® red kidney beans, rinsed and drained

tablespoons lime juice
1/4
teaspoon salt
  • 1 In cup, combine chili powder, brown sugar and cumin. Rub both sides of chicken breasts with the spice mixture.
  • 2 In large skillet, heat oil over medium heat. Cook chicken in hot oil 12 minutes, turning occasionally, or until instant-read thermometer inserted in the thickest portion reads 160°F and juices run clear.
  • 3 Meanwhile, in medium bowl, stir together corn, red pepper, cucumber, kidney beans, lime juice and salt.
  • 4 Evenly divide corn salsa onto 4 plates. Top each with a chicken breast.

Expert Tips

Kidney beans are loaded with plenty of fiber—the soluble kind. Start slowly so you have time to get used to added fiber in the diet!

i tried making this recipe tonight. I am definitely a novice in the kitchen and am trying to eat healthier and cook for myself. The corn salsa came out fine, pretty hard to mess that up i suppose. But the chicken was not very flavorful. What did I do wrong? I tenderized then rubbed both sides with the spice mixture and cooked in a pan with some oil. Unfortunately the chicken came out very bland and boring. Should i let the meat sit in this spice mixture for some time? Please help...

I used a zucchini instead of cucumber and also added cilantro and diced green chilis to the veggie mixture. I love what brown sugar does to chicken as far as taste so the chicken was a hit with me. I cooked the veggies, but reserved some to have the next day as a salsa.

We really enjoyed this recipe. I made a lot of changes to the salsa though. I used frozen corn. Added onion, cilantro, chopped zucchini, red bell pepper, fresh chopped jalapeno, a few dashes pf chili powder and served it warm as a side. It was WONDERFUL! Also put the chicken on corn tortillas and served as tacos.
