cups cut-up cooked turkey or chicken

cups boiling water
1/3
cup fat-free (skim) milk

medium green onions, sliced (1/4 cup)

can (10 3/4 oz) condensed 98% fat-free cream of mushroom soup

package (6 oz) original-flavor long-grain and wild rice mix
  • 1 Heat oven to 350°F. In ungreased 2-quart casserole, mix all ingredients, including seasoning packet from rice mix.
  • 2 Cover casserole. Bake 45 to 50 minutes or until rice is tender. Uncover; bake 10 to 15 minutes longer or until liquid is absorbed. If desired, sprinkle with additional green onion.

Expert Tips

If you don’t have cream of mushroom soup available, you can also use cream of chicken or cream of celery.

This super-easy casserole is low in fat and cholesterol. Serve with whole wheat rolls and fresh green beans for a well-rounded meal.

I thought this recipe was great! Some people said it was bland, but the seasoning mix from the rice should have given it a little something. Overall, I thought the recipe was great-we'll definitely be making again!

My teenage son made this for dinner by himself by using left over roasted turkey breast...so, it is really easy AND it was fabulously delicious.
