Expert Tips

Mushrooms grow in the dirt and often contain selenium from the surrounding soil. Selenium helps in metabolism of vitamin E, an antioxidant.

This wild pizza is perfect with a salad of mixed field greens drizzled with olive oil and fresh lemon juice accompanied by chilled mineral water.

I used dehydrated shiitake mushrooms for added texture. It works better if you soak them for a few minutes before adding to the saute. I also added a little splash of white wine to the saute before adding the parsley. It turned out very well.
