very good recipe!
very good - would definitely make these again! i made some tweaks to the recipe -- used 1/2 cup splenda + 1/4 cup regular sugar; used 1/4 cup unsweetened applesauce instead of canola oil; also, added some blueberries to the batter. i would recommend this recipe to others!

amazing zucchini bread!!
This zucchini bread is delicious, and a very healthy alternative to the zucchini bread that i used to make with a whole cup of oil! I actually made this recipe into muffins so it wouldn't take as long to cook, only about 25 minutes and the muffins were delicious! Will definitly make this recipe again!!

Excellent Breakfast
I used a glass loaf pan and didn't know that I had to reduce the temp by 25F but even at 40min, the bread was well done! I would make this again but start watching the time at 30min. Substituted carrot for zucchini because that's what I had on hand. Also added raisins and walnuts...texture was perfect. Excellent recipe!

I loved this recipe! The one thing that was a little tricky is all the zesting - that was a little time consuming. I added raisins to my bread, it came out GREAT. i highly reccommend you try it, but i also suggest you make a few loaves at a time - freeze a couple, give some away, whatever, but you might as well do all the grating at once. If you like sweet breads, you'll love this one.
