Did You Know?
Bananas are at their sweetest when very ripe, flecked with brown and very soft. Extra unpeeled bananas can be bagged and frozen up to a month. Just thaw, cut off the end of the peel and squeeze the banana into your mixing bowl.
Substitution
You can substitute about 1/2 cup dried currants or dried cranberries for the walnuts, if you like.

makes:1 loaf (16 slices)
1 1/2cups Gold Medal® whole wheat flour
1teaspoon baking powder
1/2teaspoon baking soda
1/2teaspoon salt
1/2teaspoon ground cinnamon
3/4cup sugar
1/4cup canola oil
2egg whites
1cup mashed ripe bananas (2 large)
1/4cup fat-free (skim) milk
1teaspoon vanilla
1/4cup chopped walnuts or pecans, toasted*
1.Heat oven to 350°F. Grease bottom only of 8x4-inch or 9x5-inch loaf pan with shortening, or spray with cooking spray. In medium bowl, mix flour, baking powder, baking soda, salt and cinnamon.
2.In large bowl, beat sugar, oil, egg whites, bananas, milk and vanilla until well blended. Stir in flour mixture until well blended. Stir in walnuts. Spoon into pan.
3.Bake 8-inch loaf 55 to 62 minutes, 9-inch loaf 45 to 52 minutes, or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to cooling rack. Cool completely, about 1 hour, before slicing.

A can't miss recipe
My family loved this banana bread. I used applesauce in place of the oil, doubled the cinnamon and added chocolate chips. Really good flavor and texture.

Awesome!
This was the first time I've ever made banana bread, and it was a complete hit at home and at work! Very easy to follow the instructions and delicious! I had to alter the baking time because of my oven but still amazing.

Love this recipe, healthy and delicious. Makes 36 mini muffins which I package in 3s and freeze. Use in lunch bags and snacks. YUM!

too good!
instead of using all whole wheat flour, I used 1 cup of all purpose flour, 1/2 c. whole wheat flour and 1/2 cup of wheat bran, 1/2 cup sugar, it turned out so soft and yummy.

banana nut bread
i made this bread for my mom. it did not take long to make. i omitted the nuts and used raisins instead. what a good bread! we all loved it. i would recommend this recipe. i give this recipe a thumbs up

I had about 8 recipes for Banana Bread before I tried this one. It was so easy --always have the ingredients on hand-- and tasted great ( even when I accidently left out the eggs!)Simple, Easy to throw together, moist and delicious.

I have been looking for a banana nut bread recipe and stumbled upon this one. I followed the recipe exactly as stated and absolutely loved the final result. There is plenty of flavor and the bread is nice and moist. You would never know this is a "healthified" version!

It was awesome, I burnt the top and sides because I am using a toaster oven of sorts and they run much hotter, but other than that it was moist. I was bad and added 1/4 cup dark mini chocolate chip's ;)

Great Bread
I've made this bread a few times now. It's moist and delicious. The egg whites completely change the consistency of the bread. I substituted the same amount of unsweetened applesauce for the oil and used a Splenda/Sugar blend instead of all sugar. I'll never go back to my old recipe!

Healthified Banana Nut Bread
Good recipe. I reduced the calories even further by substituting the 3/4 c sugar with 1/2 c Splenda and 1/4 c regular sugar. Sprinkling some chopped walnuts on top of the dough in the pan before baking gives it a yummy toasted nut flavor and crunch.

Banana Bread
I make banana bread often and was using shortening with saturated and trans fats, just because that's the recipe I had! I felt good about making this recipe that used canola oil and egg whites. I thought it tasted much better than my old bread! It's delicious! (I used white flour though instead of wheat.)
