Whole wheat flour and high-fiber cereal are the goodies tucked in a chocolate-lover's sweet muffin. From eatbetteramerica.

makes:12 muffins

1cup Fiber One® original bran cereal
1 1/3cups buttermilk
1/4cup canola or vegetable oil
1egg
3/4cup packed brown sugar
1/2cup Gold Medal® whole wheat flour
1/2cup Gold Medal® all-purpose flour
1/2cup unsweetened baking cocoa
1teaspoon baking soda
1teaspoon vanilla
1/4teaspoon salt
1/3cup miniature semisweet chocolate chips
1.Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2.In medium bowl, mix cereal and buttermilk; let stand 5 minutes. Stir in oil and egg. Stir in remaining ingredients except chocolate chips. Stir in chocolate chips. Divide batter evenly among muffin cups.
3.Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.

Great!
I made these as a halloween treat for the office and for home. Everyone at the office loved them! My husband is a very, very picky eater, especially when it comes to chocolate desserts, but he loved them!! Will definitely be making them more often.

Double-chocolate muffins
I made up this recipe and substituted applesauce for the oil and substituted 1/2 c of chocolate pudding instead of the cocoa. The pudding gave it that little bit of extra sweet that made these sooooo good! my kids don't usually love healthy alternatives, but they had second and third helpings of these! Will make again and again!

aspartame??
My kids and I loved these and I was glad to have a healthier recipe for choc. muffins...but then I looked at the ingredients on the Fiber One cereal box and saw that it includes aspartame. I've read many articles that have turned me away from eating anything with aspartame in it- I think I'd rather my kids have legitimate sugar than aspartame. I'm wondering what I can substitute for Fiber One cereal...any suggestions?

Oh my gosh, are these good. They taste like homemade chocolate cake. I put 1/2 cup applesauce instead of oil, and 1/4 cup egg substitute instead of egg to make it even less calories. I recommend these for chocolate lovers.

MMMMM!
These muffins are moist and full of chocolatey goodness! I did not find these muffins to lack sweetness as many have commented. If you try really hard you can taste the added fiber in them, but not enough that my kids would complain. The texture of the muffin is very smooth not grainy at all as some added fiber recipes can be. Overall, I was very pleased with the recipe.

Really good!
I made these today and they came out really good. The only change I made in the recipe was adding a really ripe, mashed banana that I wanted to use up. (I added it in the the liquid ingredients.) Another reviewer didn't think they were sweet enough but mine tasted fine and I think I have a pretty big sweet tooth.

Very good
I was kind of worried how these would taste after some of the reviews said they weren't that sweet. I think when you're on a diet, you're trying to get a sweet taste without the real sweet. Of course we are so used to all the added junk to make them baked goods taste better, when it is more natural, it just doesn't cut it. These do! We really liked these. They are sweet enough. I substituted Splenda Brown Sugar as someone else posted, but other than that, I followed the exact recipe. They taste like a chocolate bran muffin, but not quite as much bran as the traditional bran muffin.

good chocolate fix but...
I agree with the last review. This recipe was good, me and my mom both enjoyed them, but we both agreed that there was a sweetness missing. I even substituted oil for sweetened applesauce to add a little extra sugar and subtract a little bit of fat, but it didn't help. However, overall they were very tasty and I will be making them again.

Good, but...
These came out pretty good, but both my husband and I agree that there is just something missing! Some kind of sweetness that we can't put our finger on... I followed the recipe exactly as written. Anyone else agree? Any suggestions?

Great
These muffins are great. I substituted apple sauce for the oil and splenda brown sugar for the regular sugar to make them a bit more healthful. Very good right out of the oven or warmed in the microwave.

Delicious!
I love chocolate as much as the next woman, so I've been looking for a way to make chocolate muffins that are both tasty and nutritionally useful. These fit that bill! They taste excellent and are easy to make. The only problem I had was a slightly strange consistancy in a couple of muffins, but I think that's because I didn't get the cereal crunched up very well beforehand. Now that I've found my rolling pin, the next time I make them they should be perfect.
