makes:32 cookies
1cup Gold Medal® all-purpose flour
1/2teaspoon baking soda
1/8teaspoon salt
1/3cup granulated sugar
1/3cup packed brown sugar
1/3cup no-trans-fat vegetable oil spread
1/4cup unsweetened applesauce
1egg
1 1/2teaspoons vanilla
1 1/4cups Cascadian Farm® organic oats & honey granola
5oz dark or bittersweet chocolate, coarsely chopped
1.Heat oven to 375°F. Line cookie sheets with cooking parchment paper.
2.In small bowl, mix flour, baking soda and salt. In medium bowl, beat sugars, vegetable oil spread and applesauce with electric mixer on medium speed until smooth. Beat in egg and vanilla. On low speed, gradually beat in flour mixture.
3.Stir in granola (breaking up any large pieces) and chocolate chunks. Drop by rounded tablespoonfuls onto cookie sheets.
4.Bake 10 to 12 minutes or until golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.

These cookies are delicious! They're soft, but yet, the granola gives them a great texture. They're not big on presentation, but perfect for around the house to cure that chocolate itch. Only needed 10 minutes of bake time as well. My only recommendation is to let the batter "rest" for about 20 minutes before baking. The cookies seemed to set-up better that way.

These cookies are very delicious! They are extremely soft cookies so you want to make sure you use the parchment paper (I didn't and I paid). Also, I only cooked them for about 10 minutes at 375 and not 12. They get really brown but they'll taste great!
