Romano and cream cheese join fresh vegetables to make this a delicious cream-of-the-crop recipe. From eatbetteramerica.

makes:6 servings

1 1/2cups uncooked quinoa
3cups Progresso® reduced-sodium chicken broth (from 32-oz carton)
2oz 1/3-less-fat cream cheese (Neufchâtel)
1tablespoon chopped fresh or 1 teaspoon dried basil leaves
2teaspoons butter or margarine
2cloves garlic, finely chopped
5cups thinly sliced or bite-size pieces assorted vegetables, such as asparagus, broccoli, carrot or zucchini
2tablespoons grated Romano cheese
1.Rinse quinoa thoroughly; drain. In 2-quart saucepan, heat quinoa and broth to boiling. Reduce heat; cover and simmer 10 to 15 minutes or until all broth is absorbed. Stir in cream cheese and basil; cover and remove from heat.
2.In 10-inch nonstick skillet, melt butter over medium-high heat. Cook garlic in butter about 30 seconds, stirring frequently, until golden. Stir in vegetables. Cook about 2 minutes, stirring frequently, until vegetables are crisp-tender.
3.Toss vegetables and quinoa mixture. Sprinkle with Romano cheese.

Great recipe for Quinoa
I am always looking for new ways to serve quinoa. This recipe is a great change from just using plain veggies and quinoa. The addition of the cream cheese almost had me convinced I was eating risotto! I will definitely make this again.

Excellent!!!
I tried this last night and it was amazing, it also made great leftovers. I added some garlic powder and pepper too. I have always loved quinoa, but never had a creative recipe for it.

Interesting..
I have been looking around for a recipe with quinoa in it to try it for the first time and I did this one. I apparently over cooked the quinoa because this recipe turned out to be pure mush.. we had a lot of left overs that we threw away. ;( It had a good taste, but the texture was icky (prob. my fault)

Excellent! Although I did add onion powder, pepper, and seasoned salt to the vegetable mixture (broc., zucc.,& mushrooms)and I topped the primavera with extra grated parm & rom. cheeses. Excellent, husband loves it!
