Get ready for a taste adventure! The mild, nutty taste of bulgur is delicately seasoned with apples, mushrooms, blue cheese and walnuts. From eatbetteramerica.
Prep Time:15 min
Start to Finish:30 min
makes:6 servings
1tablespoon olive or canola oil
1cup uncooked bulgur
1cup sliced fresh mushrooms (3 oz)
1/3cup chopped green onions
2cups Progresso® reduced-sodium chicken broth (from 32-oz carton)
1/2cup chopped Granny Smith apple
2tablespoons chopped walnuts
1tablespoon crumbled blue cheese
1.In 3-quart saucepan, heat oil over medium heat. Add bulgur, mushrooms and onions; cook, stirring frequently, until bulgur is golden and mushrooms are tender.
2.Stir in broth. Heat to boiling, stirring once or twice; reduce heat. Cover; simmer 15 minutes (do not lift cover or stir). Remove from heat.
3.Stir in remaining ingredients. Fluff lightly with fork.

This was excellent! I am not a big fan of blue cheese and I tried it anyway. It doesn't even need the cheese. I will make this again maybe try it with Feta Cheese.
