makes:4 servings
1/3cup uncooked bulgur
1large orange, peeled, chopped (3/4 cup)
1medium onion, chopped (1/2 cup)
1small tomato, chopped (1/2 cup)
3/4cup chopped fresh parsley
2tablespoons lemon juice
2teaspoons grated orange peel
2teaspoons olive or vegetable oil
1/2teaspoon salt
1/4teaspoon pepper
1/8teaspoon crushed red pepper flakes
1.Cook bulgur as directed on package, omitting salt.
2.In glass or plastic bowl, toss bulgur and all remaining ingredients.
3.Cover; refrigerate until chilled, about 2 hours.
