Containing artichoke hearts, broccoli, cauliflower and zucchini, this veggie-soba dish is kissed with fresh-squeezed lemon juice and a touch of chopped fresh basil. From eatbetteramerica.

2cups chopped fresh broccoli florets (12 oz)
2cups chopped fresh cauliflower florets (12 oz)
1large onion, chopped (1 cup)
1teaspoon grated lemon peel
1cup Progresso® chicken broth (from 32-oz carton)
2cups cooked soba (buckwheat) noodles or vermicelli
2tablespoons chopped fresh or 2 teaspoons dried basil leaves
2tablespoons lemon juice
1teaspoon olive or vegetable oil
1/4teaspoon pepper
1large zucchini, chopped (2 cups)
1box (9 oz) frozen artichoke hearts, thawed
1.In 12-inch skillet, cook broccoli, cauliflower, onion, lemon peel and 1/2 cup of the broth over medium heat 7 to 10 minutes, stirring frequently, until cauliflower is crisp-tender.
2.Stir in remaining 1/2 cup broth and ingredients. Cook about 5 minutes, stirring frequently, until vegetables are tender.
