Applesauce, cinnamon and brown sugar make these yummy muffins flavorful, moist and low in fat. From eatbetteramerica.
Prep Time:10 min
Start to Finish:35 min
makes:12 muffins
2cups Cheerios® cereal
1 1/4cups Gold Medal® all-purpose flour
1/2cup packed brown sugar
1teaspoon ground cinnamon
1teaspoon baking powder
3/4teaspoon baking soda
1cup applesauce
1/3cup fat-free (skim) milk
2tablespoons vegetable oil
1egg or 1/4 cup fat-free egg product
1/2cup raisins, if desired
1.Heat oven to 400°F. Spray bottoms only of 12 regular-size muffin cups with cooking spray.
2.Crush cereal. In large bowl, stir together cereal, flour, brown sugar, cinnamon, baking powder and baking soda. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
3.Bake 18 to 22 minutes or until golden brown.

Tasty and Healthy!
Thanks for this recipe! Great healthy muffin and family enjoyed them. Made them with raisins and will try them with chopped apples next time. Can't wait!

Must make with the raisins.
I made these early this week without the raisins. The muffin had a light flavor but would have been much better with the raisins. Will definitely make again...this time with the raisins!

my modifications to this recipe
i loved these muffins. my friends did too. i used 3/4 cup unbleached flour , 1/2 cup wheat flour , i omitted the oil. i added my own chunky apple sauce .ihave added 1 1/2 cups of my apple sauce and like i said no oil.they were great.

These muffins are great for breakfast or even a snack. My 5 year old helped make them and they are very kid friendly. Will make again.

Great Snack
These were easy to make and tasted very good. My batch made 15 and with some lighter ingredients made them only 37 calories each! They are best when warmed. They would be good with a little butter too, but I didn't try that.

moist applesauce muffins
These muffins were easy to make and a hit with almost all of my 6 kids.(The one who didn't like it, doesn't care for the mix in type stuff.) I doubled the recipe and used half raisins and half craisins. I also mixed in 1/2 c thinly sliced almonds and sprinkled more almonds on the top prior to baking. The house smells like fall!
