cups Gold Medal® whole wheat flour

teaspoon baking soda
1/2
teaspoon baking powder
1
teaspoon cinnamon
Pinch salt

eggs

cup sugar
1/4
cup canola oil
1/4
cup orange juice
2
tablespoons plain nonfat yogurt
1
teaspoon vanilla extract
Grated zest of 1 orange
Grated zest of 1 lemon

cup grated zucchini
  • 1 Grease and sugar a 9 x 5 inch loaf pan. Preheat oven to 350 degrees.
  • 2 Sift flour, baking soda, baking powder, cinnamon and salt into bowl. Separately, beat the eggs and sugar until well mixed and slightly thickened. Beat in the oil, juice, yogurt, vanilla, and grated zests. Add the dry ingredients and zucchini and mix well by hand.
  • 3 Pour batter into prepared pan and bake for 50 minutes or until deep golden brown. Cool on wire rack.

Expert Tips

Whole wheat flour has plenty of vitamins and minerals. Zucchini is a good source of magnesium, which helps lower blood pressure and helps reduce bone loss.

very good - would definitely make these again! i made some tweaks to the recipe -- used 1/2 cup splenda + 1/4 cup regular sugar; used 1/4 cup unsweetened applesauce instead of canola oil; also, added some blueberries to the batter. i would recommend this recipe to others!
