package (7 oz) vermicelli, broken in half

medium carrot, shredded

cup sliced quartered cucumber

cup coarsely chopped red bell pepper
1/3
cup sliced green onions
1/4
cup chopped fresh cilantro
1/2
cup Thai peanut stir-fry and dipping sauce
  • 1 Cook vermicelli as directed on package. Drain in colander or strainer; rinse with cold water until cold. Drain well.
  • 2 In large bowl, toss drained cold vermicelli and all remaining ingredients to coat evenly with sauce.

Expert Tips

To make this salad a day ahead: Cook vermicelli; cover and refrigerate. Prep vegetables; place in covered bowl and refrigerate. Just before serving, combine all ingredients and toss gently.

It was delicious but I would suggest two things: - Use the whole jar of peanut sauce. It seemed a teeny bit bland without the whole jar which wasn't more than the recommended amount - Definitely pre-make the noodles a day ahead. I didn't and although it was good, it would have made all the world of difference I think if the noodles were more dry. Overall, it was very good and super easy. Will definitely make again.

I made this dish a couple days ago for me and my boyfriend, and we both loved it, lots of flavors going on with a little kick from the peanut sauce i used. This is a keeper, will make again and again!

This was a really easy dish to make but tastes like you spent a lot more time on it then you did. I added the entire jar of Thai peanut sauce (it was a small one but still more than 1/2 cup) and I think it needed it. Not spicy at all!
