large onion, coarsely chopped (1 cup)

teaspoons finely chopped garlic

bag (1 lb) frozen broccoli, cauliflower and carrots

can (15 to 16 oz) red beans, drained, rinsed
1
can (15 to 16 oz) garbanzo beans, drained, rinsed
2
cans (14.5 oz each) diced tomatoes with green chiles, undrained
1
can (8 oz) tomato sauce
2
cups Green Giant® Niblets® frozen whole kernel corn

tablespoons chili powder

tablespoon ground cumin

teaspoon salt

teaspoon ground red pepper (cayenne)
  • 1 In 4 1/2- to 5-quart Dutch oven, heat oil over medium-high heat. Add onion and garlic; cook 4 to 5 minutes, stirring frequently, until onions are softened.
  • 2 Stir in remaining ingredients. Heat to boiling. Reduce heat to medium-low. Cover; cook 15 to 20 minutes, stirring occasionally, until chili is hot and vegetables are crisp-tender.

This is the first dish I tried on this website, and it is to die for. Everyone in the family loved it (except for the little one, but she never was anything new) perfect mix of spices, the vegetables make this a truly healthy meal. I would personally go for low-sodium tomato sauce because this has quite high sodium levels. Otherwise great meal all around.

super easy to make and tasted great! i too, served it with cornbread muffins (even before reading the other review!) and it was the perfect cold weather meal

This was simple to make. It is easier if you chop the vegetables and measure the spices in advance, which is what I did. It does make the serving size suggested. It has a lots of spices and you can taste this while eating this chili. I was skeptical of making this as it had not yet been rated, but it was easy to make and tasted good. I made cornbread muffins to go with this and my family enjoyed this meal.
