medium firm bananas, cut into 1-inch slices (3 cups)

tablespoons margarine or butter, melted

tablespoons orange juice

brownies (3 inch square)

cup caramel topping
  • 1 Heat coals or gas grill for direct heat.
  • 2 Cut 1/2-inch slice off top and bottom of pineapple; carefully cut off rind. Cut pineapple into 1-inch chunks (3 cups). Cut mangoes lengthwise in half, remove seed and cut into 1-inch chunks (3 cups). Cut bananas into 1-inch slices (3 cups). In small bowl, mix butter, orange juice and brown sugar.
  • 3 On each of twenty-four 10-inch metal skewers, alternately thread pineapple, mango and banana pieces, leaving 1/4-inch space between each piece. Brush butter mixture over fruit.
  • 4 Cover and grill fruit over MEDIUM-LOW heat 10 to 15 minutes, turning frequently and brushing with butter mixture, until fruit is lightly browned.
  • 5 Cut brownies diagonally in half. On each plate, place 1 brownie triangle. Remove fruit from skewers, and arrange around and over brownies. Drizzle with caramel topping.

Expert Tips

Buy “green tip” bananas, which are ripe but still firm enough to withstand grilling.
