can (14 to 15 oz) cream-style corn

can (8 oz) whole kernel corn, drained

pouch (6.5 oz) golden corn muffin and bread mix
1/4
cup canola oil

eggs

can (15 oz) black beans, drained, rinsed
1/3
cup chunky-style salsa
Chopped fresh cilantro, if desired
  • 1 Heat oven to 400ºF. Grease 11x7-inch (2-quart) glass baking dish. In medium bowl, mix cream-style corn, whole kernel corn, muffin mix (dry), oil and eggs. Pour into baking dish.
  • 2 Bake uncovered about 30 minutes or until casserole springs back when touched lightly in center.
  • 3 During last 5 minutes of baking, in 1-quart saucepan, mix beans and salsa. Cook over medium heat, stirring occasionally, until hot. Cut casserole into squares; top with bean sauce. Sprinkle with cilantro; serve immediately.

Expert Tips

Make this super quick by buying already-baked corn muffins or corn bread squares in the bakery or deli section. Then skip the first five ingredients and the first two steps. All you have to do is heat the beans and salsa and pour over the corn bread--so satisfying.

Triple-Corn Squares with Chicken Sauce: Omit beans. Increase salsa to 3/4 cup. Heat 1 1/2 cups diced cooked chicken or turkey with the salsa in step 3.

I am confused, in the listing of ingredients it has canola oil listed. Checked recipe and can't see where it states to add oil it does however state to add butter. Also it the canola oil is correct can I sub some applesauce the oil amount is to high for my liking. Recipe does sound very good so will try after I get clarification.
