oz uncooked whole wheat fettuccine

teaspoons olive or vegetable oil

medium onion, finely chopped (1/2 cup)
1
clove garlic, finely chopped

medium tomatoes, chopped (2 1/2 cups)

cups cubed cooked chicken or turkey breast

tablespoons chopped fresh or 1 teaspoon dried basil leaves

teaspoon salt

teaspoon red pepper sauce
  • 1 Cook and drain fettuccine as directed on package. Cover to keep warm.
  • 2 Meanwhile, in 10-inch nonstick skillet, heat oil over medium-high heat. Cook onion and garlic in oil, stirring occasionally, until onion is crisp-tender. Stir in remaining ingredients except fettuccine; reduce heat to medium.
  • 3 Cover; cook about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft. Serve over fettuccine.

Many different olive oils are available. Extra-virgin, from the first pressing of the olives, has a fruity flavor that doesn't take well to heat. Go ahead and use the less-expensive pure olive oil when heating the oil.

I made this for dinner last evening. Everyone thought it was very good, but I thought it was a bit bland. I think it's because I choose to use the dried basil leaves instead of fresh. Next time I will be using fresh basil and topping it with a bit of low-fat cheese. But all-in-all a good dish!

I decided to substitute the chicken with mushrooms. However, my husband didn't love that idea, so we added it back, WITH the mushrooms. At the recommendation of another review, I also added a cup of red peppers to add flavor. My husband generally hates whole grain pasta, but even he thought this dinner was amazing and a make-again! We are going to add a little spinach next time to bump up the nutrition, but I think this will be a regular in our house.

I used fire roasted canned tomatoes for convenience and plan to add mushrooms next time. I found this dish quite filling and it came together very quickly. I will definitely add to to my favorites!
