chicken drumsticks or thighs (about 1 3/4 lb), skin removed

can (8 oz) sliced water chestnuts, drained

cup teriyaki sauce (from 10-oz bottle)

cup orange marmalade

teaspoon ground ginger

cloves garlic, finely chopped

cup fresh snow pea pods

tablespoons cornstarch

cups hot cooked rice
Sliced green onions, if desired
  • 1 Spray 2 1/2- to 3 1/2-quart slow cooker with cooking spray. In slow cooker, place chicken and water chestnuts. In small bowl, mix 1/4 cup of the teriyaki sauce, the marmalade, ginger and garlic; pour over chicken.
  • 2 Cover; cook on Low heat setting 7 to 8 hours.
  • 3 Remove chicken from slow cooker; keep warm. Stir pea pods into slow cooker. In small bowl, mix remaining 1/4 cup teriyaki sauce and the cornstarch; stir into slow cooker.
  • 4 Increase heat setting to High. Cover; cook 20 to 30 minutes longer or until pea pods are crisp-tender. Serve chicken and pea pods over rice; sprinkle with onions.

Expert Tips

If fresh pea pods aren't available, use a 6-oz package of frozen snow pea pods, thawed and drained.

Fresh chopped garlic in water, available in jars, is a great convenience item to keep on hand. If you don't have fresh garlic, use 1 teaspoon of the jarred chopped garlic instead.

Teriyaki is the name of a Japanese dish that marinates meat in a mixture of soy sauce, sugar, ginger and other ingredients before cooking. A purchased teriyaki sauce is used in this recipe and, mixed with orange marmalade, creates a distinctive sauce for the chicken.
