cup Yoplait® Fat Free plain yogurt (from 2-lb container)

tablespoons lemon juice

teaspoon paprika

teaspoon ground ginger

teaspoon ground cumin

teaspoon crushed red pepper flakes

teaspoon pepper

clove garlic, finely chopped

boneless skinless chicken breasts (about 1 1/4 lb)
Lemon slices, if desired
  • 1 In small bowl, mix water and mustard; stir in remaining ingredients except chicken and lemon slices. Place chicken in shallow glass or plastic bowl. Pour marinade over chicken; turn to coat with marinade. Cover; refrigerate at least 12 hours but no longer than 24 hours to marinate.
  • 2 Heat oven to 375°F. Remove chicken from marinade; discard marinade. Place chicken in ungreased 13x9-inch (3-quart) glass baking dish. Bake about 45 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).
  • 3 To serve, garnish with lemon slices.

I made this two nights ago and it was delicious! The chicken was moist, the spices were perfect! I made a little change and used 1/4 cup of plain yogurt rather than 1/2 cup and it was the perfect amount. We paired the chicken with whole wheat couscous to which we added a little cumin and pepper. My husband loved it all and wants to have it again soon!

very easy & tasty - marinated about 24 hrs, then baked. the chicken was very juicy and the indian spices made for a great blend of flavors

The chicken came out very moist and flavorful but the yogurt gave a funny pasty touch to the palette. It is very good for you, inexpensive, quick and easy but I will never make it again, no one cared for the yogurt texture.
