lb boneless skinless chicken breasts, cut into 3/4- to 1-inch pieces

small red onion, cut into thin wedges

cup water

cup uncooked fusilli pasta (about 3 oz)

bag (1 lb 5 oz-size) frozen Szechuan stir-fry mix with vegetables and Szechuan sauce
  • 1 Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Add chicken and onion; stir-fry 3 to 5 minutes or until chicken is light brown.
  • 2 Stir in water; heat to boiling. Stir in pasta. Cook 8 to 10 minutes, stirring occasionally, until pasta is almost tender (do not drain).
  • 3 Stir in packet of sauce mix from stir-fry mix until well blended. Stir in vegetables; reduce heat to medium. Cover; cook 8 to 9 minutes, stirring occasionally, until vegetables are crisp-tender. Sprinkle with peanuts from stir-fry mix.

Expert Tips

For an additional time-saver, look for already-sliced chicken breast strips in the meat aisle (the package may be labeled "chicken for stir-fry"). You'll need about 1/2 pound of strips for this recipe.

This is so easy to make, and it's all in one pan for easy cleanup! I recommend using Green Giant frozen Szechuan mix, because it has all the veggies and 2 packets of sauce. This was so good and easy! It really tastes like restaurant-style stir-fry. A new favorite.
