small butternut or buttercup squash (about 1 lb)

cup apple cider or water

small apples, peeled, cubed

tablespoons sugar

tablespoon no-trans-fat margarine or butter, if desired
1/2
teaspoon ground cinnamon
1/4
teaspoon ground nutmeg
  • 1 Peel squash with vegetable peeler. Cut squash in half; remove seeds and fibers. Cut squash into 1/2-inch cubes.
  • 2 In 1 1/2-quart microwavable casserole, place squash and cider. Cover; microwave on High 5 to 7 minutes, stirring once halfway through cooking, until squash is tender.
  • 3 Stir in remaining ingredients. Cover; microwave on High 2 to 3 minutes longer, stirring once halfway through cooking, until squash and apples are very tender. Serve immediately. If desired, mash before serving.

Quick and easy. I used coconut oil instead of margaringe or butter and it turned out perfectly. Instead of peeling and then putting the squash in the microwave, I poked it several times and then put it in whole, it only took a few minutes to peel after it was cooked. Used powered spiced apple cider instead of water. Quick and good

This recipe was good when made it the first time, according to the directions; this week I forgot to get cider at the store, so I substituted some applesauce and water. Either that or the stars aligned - but everyone loved it and had seconds!

My boyfriend and I both really like this. He is not a person who tries new veggies but he loves the squash with apples. It is great during the holidays.
