package (8 oz) uncooked soba (buckwheat) noodles, broken in half

bag (10 oz) Cascadian Farm® frozen organic cut green beans, thawed
1/3
cup water
1/4
cup peanut butter
2
tablespoons reduced-sodium soy sauce
1
tablespoon rice vinegar or cider vinegar
1
tablespoon honey
1
tablespoon hot chili paste with garlic
Chopped peanuts, toasted sesame seed or chopped green onions, if desired
  • 1 In 3-quart saucepan, cook noodles as directed on package, adding green beans during last 4 minutes of cook time. Drain; pour into large bowl. Cover to keep warm.
  • 2 In same saucepan, mix remaining ingredients except peanuts, sesame seed and onions; cook over medium heat, stirring with wire whisk, until smooth and warm.
  • 3 Pour sauce over cooked noodles and beans; toss to mix. Sprinkle with peanuts, sesame seed and onions. Serve warm.

We really liked this. It is a little too peanut buttery for us to eat very often, but very quick and easy. Also, spicy-ness was great! I added toasted seseme seeds and green onions, added some nice flavor to it!!

I love, love, love! this recipe. It is super quick, easy and absolutely delicious. My husband and I eat it probably once every week or two. Using fresh beans definitely makes a difference.

This meal was great. It tastes much better fresh than re-heated but still a good vegetarian meal or side dish. I used natural peanut butter and it turned out good.
