large green bell pepper, chopped (1 cup)

tablespoon chopped fresh or 1 teaspoon dried oregano leaves

teaspoon ground red pepper (cayenne)

medium onion, chopped (1/2 cup)

clove garlic, finely chopped

can (14.5 oz) stewed tomatoes, undrained

can (15 to 16 oz) black-eyed peas, drained
  • 1 In 10-inch skillet, heat all ingredients to boiling, breaking up tomatoes and stirring frequently; reduce heat.
  • 2 Cover; simmer about 10 minutes or until liquid is almost absorbed.

I just had it for dinner and it was better than I thought. I used kidney beans instead of Black eyed peas. It had a lot of flavor! I still have three leftover servings for the next few days. I would definatley make this again.

I liked this one, it made a great side to my spinach enchiladas. I always change or substitute things in my dishes, this one allows many possiblities!

I used pre-cooked brown rice instead of instant, and I added tofu. This was really delicious, and very filing. I printed a copy of the recipe and it went into my collection.
