Spicy Mexican Skillet Chicken

boneless skinless chicken breasts (about 1 1/4 lb)

teaspoon canola or soybean oil

can (15 oz) Progresso® black beans, drained, rinsed

cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn
1/3
cup Muir Glen® organic salsa (any variety)
Chopped fresh cilantro, if desired
  • 1 Mix chili powder, salt and pepper. Sprinkle evenly over both sides of chicken.
  • 2 Spray 10-inch skillet with cooking spray. Add oil; heat over medium heat. Cook chicken in oil 8 to 10 minutes, turning once, until juice is clear when center of thickest part is cut (170°F).
  • 3 Stir in beans, corn and salsa. Heat to boiling; reduce heat. Cover; simmer 3 to 5 minutes or until vegetables are hot. Sprinkle with cilantro.

Easy, tasty, quick and, yummy meal. I cut the chicken breast into bite size pieces, so each bite was flavor packed. Bite sized pieces allowed the meal to feed double the amount people. Use a mild salsa and or a mild chili powder because this dish can pack a kick. I served this meal with a saffron rice and it was amazing. This recipe will have many repeat performances at my table..

This is a good dish and easy to make. instead of the corn, I use a 10 oz bag of "steamer" microwave rice and a 10 oz bag of "steamer" microwave mixed veggies, and added a 1/2 cup of water. It would also make great Nachos if you cut up the chicken and added your favorite chips and cheese!

This is a very good recipe. I have to use mild ingredients for the husband, but it was still very tasty. I used a chunky salsa, but think a regular salsa would make it more juicy. Overall a very quick and yummy dish. There were enough veggies that we didn't need a side dish although Spanish rice would have gone very well.
