cups chopped cooked green beans

cup finely chopped peeled cucumber
1/2
cup finely chopped red onion

tablespoons chopped fresh cilantro

tablespoons Progresso® red wine vinegar or cider vinegar
2
teaspoons chopped fresh green chilies or 1/4 teaspoon crushed red pepper flakes
1
teaspoon honey
1/2
teaspoon salt
  • 1 In large bowl, mix all ingredients.
  • 2 Cover and refrigerate about 2 hours or until chilled.

Expert Tips

Eat foods like vegetables which contain a high percentage of water. More water means fewer calories for the same weight of food. Good news for your waistline.

Be sure to peel the cucumbers, even if their skin is relatively thin. By exposing all of the cucumber’s flesh to the dressing, it soaks up more flavor.

Two cups of frozen cut green beans, cooked briefly and rinsed under cool water, will save you the time of chopping and cooking fresh beans.

Loved it. Added some pre-cooked chicken breast chunks and made it into a 1-bowl meal. You really have to like cilantro and red pepper

So healthy and so good. You must like cilantro. When I make it again I am going to use double the cucumbers. They get lost with all the green beans.

My boyfriend and I just tried this recipe. I have to say, it was not very good. The cilantro was overpowering and it was very acidic. We will not be using this recipe again =/
