Star-shaped jicama pieces add a festive look to this dazzling salad, but it’ll be just as tasty with simple jicama cubes or sticks.
Variation
Toss chopped walnuts or pecans into this salad along with the dried cranberries for Nutty Mixed Greens with Fruit.

This refreshing, colorful salad is a natural for holiday meals or brunches. From eatbetteramerica.

makes:12 servings

1/2cup orange juice
1/2cup honey
1teaspoon ground cinnamon
1medium jicama, cut into 1/4-inch slices
6oranges, peeled, sliced
6kiwifruit, peeled, sliced
8cups torn mixed salad greens
1/2cup sweetened dried cranberries
1.To make dressing, in small bowl, mix orange juice, honey and cinnamon until well blended.
2.Cut jicama into star shapes using small star-shaped cookie cutter. In large serving bowl, place jicama stars, oranges and kiwifruit. Add salad greens and dressing; toss to mix. Sprinkle with cranberries.
