Shellfish, such as crab, is a good source of vitamin B-12. Our bodies need B-12 to help break down foods to give us energy.
Good as Fresh
Soaking the crabmeat in ice water for 10 minutes, then draining it and patting it dry can help remove any "canned" taste.

This dip is perfect paired with wheat crackers or tiny radicchio leaves. From Prevention Healthy Cooking.

makes:12 servings, 2 tablespoons each
2oz fat-free cream cheese or 1/3-less-fat cream cheese (Neufchâtel), softened
2tablespoons fat-free mayonnaise or salad dressing
2tablespoons finely chopped chives or green onions
2teaspoons lemon juice or white wine vinegar
1tablespoon chopped fresh dill or 1 teaspoon dried dillweed
1/8teaspoon salt
1/8teaspoon pepper
2cans (8 oz each) crabmeat, well drained
1.In medium bowl, combine cream cheese and mayonnaise. Stir until very smooth. Add chives or green onions, lemon juice or vinegar, dill, salt, and pepper. Stir to mix thoroughly.
2.Stir in crab. Cover and refrigerate several hours before serving.

Skinny Crab Dip
I made this last night to serve with toasted baguettes. I followed the receipe *almost* to the T, but had to add some HEAT to it with 1T chopped green chilies from my garden and made it spreadable by adding a tad more cream cheese (used Philly 1/3 Less Fat). We loved the result! Soaking the crab in iced water really did work. Loved this and will make it again.

Simple and Tasty
This had a great flavor and was a hit when we had a few friends over the other night. Was a little chunky with crab though and needed a little more "dip" consistency to it.
