makes:2 servings
1pint (about 10 ounces) Brussels sprouts
1medium onion, peeled and sliced
2garlic clove, peeled and minced
1/2tablespoon olive oil
Salt and pepper to taste*
1.Preheat the oven to 450 F°. Remove any wilted or yellowed leaves from the Brussels sprouts and trim the stem close to the heads. Cut each head vertically into thin slices.
2.Break the onion slices apart into rings and add to the sprouts along with the garlic and a light sprinkling of salt. Spray generously or drizzle with olive oil, toss the vegetables to coat them lightly with oil, and spread out evenly in a thick skillet or non-stick baking dish.
3.Bake for about 15 minutes, or until the vegetables are lightly browned and tender, stirring once or twice as they roast. Serve hot as a side dish.
* Nutrition was calculated using 1/4 teaspoon salt and 1/2 teaspoon pepper.

Now like Brussel Sprouts
My husband has always loved brussel sprouts, me - not so much. I tried this because I know how good they are for me. I will definately do this one again and again!

I Fixed this recipe for my mother and I. I roasted them in the oven and they were delicious. I remember brussel sprouts being awful when I was a kid but this was delicious recipe. I have fixed it twice in the last three weeks. The garlic gave the brussell sprouts a nice nutty flavor. This is a must try. It was really, really great receip.

I could eat these every day for part of my "green"! I did not use to care for this veggie but I do now! I prefer eating them at room temperature.
