Very Rich
Even though these were lower in fat/calories they didn't taste like it-still very rich. Will make it with the mix of fat free and half fat next time.

Pretty Good
These were good for light cheesecakes. The flavor was excellent. Not overly sweet like some have mentioned. Still somewhat small for the amount of calories/fat. I sprayed some butter into the crumbs and had no problem with the crust. Def. use the foil papers.

chocolate lovers delight
I made these for my husband on valentines day and we both thoroughly enjoyed them. He actually bought regular cream cheese because they were on sale, but i've used Neufchatel (1/3 reduced fat cream cheese) enough times to know it doesn't compromise flavor. I cannot wait to make these for a party...I know they will get rave reviews!

Cake Mix
This may be the 2nd time this goes up, I am not sure if my first entry went through..if so, sorry!
But these cupcakes are delicious, I have the biggest sweettooth, and they hit the spot. However I was wondering if anyone knows how to make this with cake mix? Thank You!

I used a little bit of "I Can't Believe It's Not Butter" with the cookie crumbs as earlier suggested so that the crust wouldn't crumble, and it worked very well. As wonderful as these mini cheesecakes were, they were a bit too rich for my taste. I'll probably play around with the recipe a bit, but I am definitely making these for the holidays. They are the perfect little bite-sized desserts.

Twist-A Chocolate Burst!
So a funny thing happened the 1st time I made these. About 10 minutes in to baking I discovered I forgot the CHOCOLATE! I quickly took out the tin and proceeded to carefully spoon an equal portion in to the middle of each muffin. Wow did it ever work and create a punch of chocolate delight in the core!

Awesome!
I made this cheesecakes for the holiday and everyone LOVED them. I had several people say it was one of best desert that they have had! I made them into mini cheesecakes and they were a perfect bite size. I am going to make another batch for NYE!

Healthified Mini Chocolate Cheesecakes
These were delicious! The only problem I found was that the chocolate wafer cookies did not stick very well to the cheesecake mixture. Next time I will probably add a bit of melted butter to the crushed cookies.

delicious but fattening
It's true. This is quite delicious but the fat content and calories turns me off a bit. Instead of using the fresh fruit and the frudge, I bought fat-free, calorie-free, sugar-free raspberry spread. I heated it up in the microwave and spread it on top. It was excellent! I didn't have baking chocolate on hand either so I ended up using semisweet chocolate chips. It still worked just fine. I'll have to try the egg substitute, splenda, and fat-free cream cheese next time I bake this.

So Delish!!!

Freezing should be fine with these. Cheesecake freezes wonderfully. But, I would advise to add the topping after you remove them from the freezer.

Yum!
I made these for a birthday lunch and they were a hit! Nobody could tell that it was "healthified" and everybody enjoyed these treats. I will definitely keep this recipe in my permanent collection.
