makes:10 servings (about 1 1/4 cups each)
2slices bacon
1/2lb lean Italian turkey sausage, casings removed
2large russet potatoes, cut into 1/2-inch cubes (about 4 cups)
1large onion, chopped (1 cup)
2cloves garlic, finely chopped
1teaspoon Italian seasoning
1/2teaspoon salt
1/4teaspoon pepper
1/4teaspoon crushed red pepper flakes
4cups water
3 1/2cups Progresso® reduced-sodium chicken broth (from 32-oz carton)
4cups chopped fresh kale or Swiss chard leaves
1can (15 or 19 oz) cannellini beans, drained, rinsed
1cup fat-free half-and-half or regular half-and-half
1.In 4-quart nonstick saucepan or Dutch oven, cook bacon until crisp; drain on paper towel. Crumble bacon; set aside. Remove and discard drippings from saucepan.
2.In same saucepan, cook sausage over medium-high heat 6 to 8 minutes, stirring frequently, until no longer pink. Drain well on paper towels; set aside.
3.In same saucepan, mix potatoes, onion, garlic, Italian seasoning, salt, pepper, pepper flakes, water and broth. Heat to boiling. Reduce heat to low; cook uncovered about 10 minutes, stirring occasionally.
4.Stir in bacon, sausage, kale and beans. Cook 10 to 15 minutes, stirring occasionally, until potatoes and kale are tender. Stir in half-and-half; cook just until heated.

"Healthified" Italian Sausage Soup
This soup was delicious! It was very easy to prepare. I substituted the turkey sausage with chicken hot Italian sausage that I get at Publix from their Greenwise section. It is very low in fat and has a good flavor. I also added a little more potatoes and kale. My husband loved this soup. My favorite soup at Olive Garden is the Zuppa Toscana and this is as good, if not better, especially since it is low fat!

Yummmm
This soup was delicious! The perfect amount of spice, and all kinds of texture. It reminded me a little bit of the soup at Olive Garden. My boyfriend loved the hardiness of the sausage & potatoes. I even substituted the greens & beans because I couldn't find what the recipe called for at Publix. (I used seasoned butter beans & watercress) It tasted great & I will definitely make it again.

Italian Sausage Soup
This soup was very easy to make and everyone in my family loved it... even my 8 year old who usually only eats Campbell's Chicken Noodle! If you've never cooked with Kale before, it might be helpful to know that you should "devein" it first. Just cut the nice dark green park off the hard stem. It had a very good flavor. I did make a few changes to the recipe: 1) I used all broth instead of water and broth, 2) I used Jennie-O Italian-seasoned ground turkey instead of italian sausage, and 3) I used 2 cans of beans instead of only 1. It is also just as good without the half-and-half because I had a bowl before I realized I had forgotten to add it!

this is great
This was a great and filling soup with a lot of flavor only I used collard greens because I already had some. But I definitely would recommend it to others.

YUMMY!!!
I just made this soup and it is so yummy. I found hot turkey sausage so I omitted the red pepper flakes. I omitted the bacon altogether. I used 2 large cans of low sodium chicken broth in place of the water. Also I added red bell pepper chopped for a little extra color. My 2 year old loves it!!

I made this last night and my husband and I both agree that it is very similar to the Zuppa Toscana from the Olive Garden,just healthier :) But next time instead of kale I'm going to use the swiss chard because the kale made it a little too peppery tasting.

My husband and I are very big soup lovers, but we both agree that this is the best soup I have ever made!!! I wasn't real sure about the kale because I have never used it, but this soup has great taste. If I wanted to change anything I think next time I might add a second can of beans. We love beans though.

Move over Olive Garden's Soupa Toscana! This is great! We loved it and I will make it again! I had fresh spinach on hand so I used that this time instead of Kale. It was still delicious! Thank you for a great healthy soup!

I made this recipe with ground turkey instead on sausage and it was delicious. I tastes rich and hearty, but doesn't weigh you down. I'll be cooking it again this weekend!

So delicious it doesn't even taste like a healthified recipe. Heartier than the Olive Garden soup with the beans added. Even my 75yr dad served himself two hearty bowls. Thanks a million for this outstanding recipe!
