Variation
For a different pot pie topping, make the recipe with Pillsbury® Crescent Recipe Creations™ refrigerated flaky dough sheet instead of the pie crust. Pour chicken mixture into 11x7- or 12x8-inch glass baking dish. Place the dough rectangle over hot filling; press to seal edges. Cut vents for steam. Bake 25 to 30 minutes or until crust is golden brown.
Time-Saver
Don't want to cook chicken? Look for cut-up cooked chicken near the other cooked meats or in the freezer section of the grocery store. Rotisserie chicken can also be used.

makes:8 servings (about 1 cup each)

1bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen mixed vegetables
3tablespoons all-purpose flour
1/2teaspoon salt
1/4teaspoon poultry seasoning
1/4teaspoon pepper
1 1/4cups fat-free (skim) milk
1/2cup finely chopped onion
1can (10 3/4 oz) condensed 98% fat-free cream of chicken soup
1/4cup fat-free sour cream
4boneless skinless chicken breasts (1 1/4 lb), cooked, cut into bite-size pieces (about 4 cups)
1box Pillsbury® refrigerated pie crusts, softened as directed on box
1.Cook and drain vegetables as directed on bag.
2.Heat oven to 375°F. In 2-quart saucepan, mix flour, salt, poultry seasoning, pepper and milk with wire whisk until blended. Stir in onion. Cook over medium heat 4 to 6 minutes, stirring constantly, until thickened.
3.Stir in soup and sour cream. Add chicken and cooked vegetables; mix well. Cook, stirring frequently, until thoroughly heated. Pour into ungreased 2-quart round casserole. Unroll pie crust; place over hot filling. Seal edge and flute as desired. Cut slits in several places in crust.
4.Bake 35 to 40 minutes or until crust is golden brown and mixture is bubbly. Let stand 10 minutes before serving.

Great!
This recipe was fabulous! I doubled the recipe, and had to split it into two baking dishes. I used reduced fat crescent rolls on one, and the pie crust on the other. The crescent roll version was amazing!

Chicken Pot Pie
I made this last night and instead of using frozen veggies I used fresh and it turn out great. I use 3 celery stocks, 3 carrots (peeled), frozen peas, frozen corn, 2 red potatoes (boiled for a little bit so they weren't so hard) 3, chicken breasts. Then followed the rest of the recipe. It was great since I have left over and can vacuum seal and freeze them for later. I forwarded it to all my friends that love to cook so they can try it too.

Made some adjustments 2nd time around making this recipe... I upped the mixed veggies to a 1lb bag. I left the onions out and added extra chicken. In order to compensate for the extra dry ingredients I added a can of campbell's condensed potato soup to keep the consistency right. I also put another pie crust on the bottom. That may have un"healthified" it but it was SO worth it! DELISH!! Rave reveiws all around!! YUM

Made it in one pot - but Needs more veggies
I followed the earlier suggestion and used a 16oz bag of mixed veggies. I also left out the salt. It was delicious. I turned this into an easy clean-up, one pot recipe by cooking the chicken in my two quart stovetop-to-oven pan, setting the cooked chicken aside, and then using the same pot to make the sauce and then bake the whole thing. Next time I may healthify the veggies by using green beans and carrots instead of the starchy mixed vegetables. A keeper :-)

very easy to make and so yummy! beats the pants off of anything I could buy in the store. A huge plus is that I know what the ingredients are. No preservatives, fillers,trans fats, etc. the bonus is you can change the recipie to fit your tastes. I like to add a pinch more poultry seasoning and an extra helping of veggies. A dash more pepper and heavy on the onions. It gets a little kick to it. Everyone should try this meal at least once.

Chicken Pot Pie still "healtified"
I really liked this recipe and it was absolutely scrumptous. I did make one change and used light sourcream rather then fat-free. I am not a fan of fat free sr crm. I also added more than 12 oz of mixed veggies and it made no difference in the mixture ratio. I added a bag of frozen stew mixed veggies that had potatoes, celery, carrots, and pearl onions. Y-U-M-M-Y! I was asked to put this on the regular menu list by kids and husband.

Yummy!
This is perfect on a cold evening. It is a healthified recipe but it was as good as any other pot pie I have had. I used left over lemon pepper rotisserie chicken that I had frozen the week before. Great recipe!
