makes:8 servings
1 1/2lb boneless beef sirloin steak
2teaspoons canola oil
1cup chopped onion (1 large)
1teaspoon finely chopped garlic
2cups Progresso® beef flavored broth (from 32-oz carton)
4teaspoons Worcestershire sauce
1teaspoon dried basil leaves
1/2teaspoon salt
1/4teaspoon pepper
1/4cup Gold Medal® all-purpose flour
1jar (4.5 oz) Green Giant® sliced mushrooms, drained
1tablespoon ketchup
1cup reduced-fat sour cream
6cups hot cooked medium egg noodles
1.Cut the beef with the grain into 2-inch strips, then cut the strips across the grain into 1/8-inch slices. In 12-inch nonstick skillet, heat oil over medium-high heat. Add beef; cook 4 to 6 minutes, stirring occasionally, until brown. Add onion and garlic to skillet; cook 2 minutes, stirring occasionally.
2.Stir in 1 1/2 cups of the broth, the Worcestershire sauce, basil, salt and pepper. Heat to boiling. Reduce heat; cover and simmer 15 to 20 minutes, stirring occasionally, until beef is tender. In small bowl, mix flour and remaining 1/2 cup broth with wire whisk until blended. Add to skillet. Heat to boiling, stirring constantly. Boil and stir 1 minute.
3.Stir in mushrooms and ketchup; cook until thoroughly heated, stirring occasionally. Remove from heat; stir in sour cream until well blended. Serve over noodles.

I've seen whole grain egg noodles which would be great to use instead of the regular kind.

I haven't eaten beef stroganoff in forever, especially since I have been gluten intolerant for a little over 2 years now. Friends of mine & my husband's actually made this one night for dinner & invited us over. They substituted any ingredients to make it possible for me to eat. I was floored by how full of flavor, yet healthier of a recipe this was! Absolutely delicious! For anyone who's curious, we substituted the egg noodles for Tinkyada brown rice spirals (gluten free) and used corn starch instead of flour to thicken the sauce. Just make sure you read any labels to ensure gluten is not in the sour cream or broth.

Best Stroganoff
This was so good that my family and guests were surprised that it was a healthy alternative to regular stroganoff. I went with the advice of cutting the sour cream in half and it was delish! I highly recommend making this dish!

absolutely delish!
I made this tonight for my boyfriend, and I got rave reviews! He told me it was one of the best dishes I ever made, and it certainly was! It was pretty fast and easy to make. I did tweak the recipe a little bit: I used one small onion, a heaping 1/2 cup of light sourcream, axed the ketchup and added a bit more pepper and worchestershire sauce. Definetly cut back on the sour cream, I used a half a cup, if you use the full cup it would overpower the sauce. Highly recommended!!

Waaaay too much onion
Other than this dish having way too much onion, it was delicious! My boyfriend loves beef strogy (as we call it) and he did not turn up his nose at all to this one. As far as the onion, I might reduce it by half (to 1/2 C).

Good, but can be healthier
This is great, but I made the following adjustments: - use olive oil or olive oil PAM rather than canola oil - use low sodium beef broth - cut out the salt - eliminate, use Mrs. Dash, or salt substitute - use fat-free yogurt rather than sour cream - use fresh mushrooms rather than canned - use whole grain noodles

stroganoff
I used chicken thighs instead of the beef, no-cal butter spray instead of the oil and chicken broth instead of beef. Kept everything else the same--even though I thought using Ketchup was a little weird. I think the onions were just right & will definitely make it again. Loved it!

This dish was very pleasing for us! There was one thing that I would change though. I recommend decreasing the onions by half. There were way too many onions in this dish - and my boyfriend loves onions.

Beef Stroganoff
I just made this dinner tonight. I also made it the Healthified way and was very impressed with the outstanding flavor. Everyone was surprised that a lower fat dinner could taste as well as it did. This is a keeper recipe. Thanks for all the Great menus!
