As this homey dessert bakes, the batter rises to the top, creating a delicious pudding-like creation that is irresistible! From eatbetteramerica.

makes:9 servings
1cup Gold Medal® all-purpose flour
3/4cup sugar
3/4cup fat-free (skim) milk
2teaspoons baking powder
1/4teaspoon salt
1tablespoon butter, melted
2bags (8 oz each) Cascadian Farm® frozen organic blueberries
2teaspoons finely chopped crystallized ginger, if desired
1.Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, stir flour, sugar, milk, baking powder and salt until well blended. Stir in melted butter. Pour into baking dish.
2.Pour frozen blueberries over batter; sprinkle with ginger.
3.Bake uncovered 1 hour to 1 hour 5 minutes or until edges are golden brown and center is set. Let stand 15 minutes before serving. Serve warm.
High Altitude (3500-6500 ft): Decrease baking powder to 1 1/2 tsp.

Absolutely Delicious!
I made this for Easter for my family and it was gone by the end of the afternoon! I forgot to add the butter and no one could tell, made it healthier anyway. The ginger was a big hit with everyone! I substituted 1/4 cup white flour for wheat flour as I like the taste better. Next time I will try 1/2 cup white, 1/2 cup wheat. I definitely recommend this one!

Amazing!
This dessert was truly amazing! It tasted like a warm blueberry muffin that was super moist! We topped it with fat free vanilla ice cream and it was enjoyed by everyone!
