Peppers and tomatoes give this soup a punch of color and nutrients. From Prevention Healthy Cooking.

makes:6 servings
4teaspoons olive oil
1large onion, chopped
2medium stalks celery, coarsely chopped
2large red and/or yellow bell peppers, coarsely chopped
1/2teaspoon freshly ground black pepper
3oz Canadian-style bacon, chopped
3cloves garlic, finely chopped
4teaspoons chopped fresh thyme
3cups Progresso® chicken broth (from 32-oz container)
6small new potatoes (3/4 lb), cut into 1/2-inch chunks
1can (14.5 oz) Muir Glen® organic diced tomatoes, drained
1/2cup dry white wine or water
1 1/2cups water
2dozen littleneck clams, well scrubbed
1.Heat oil in Dutch oven over medium heat. Stir in onion, celery, bell peppers and black pepper. Cover; cook, stirring occasionally, 12 to 14 minutes or until vegetables are tender.
2.Stir in Canadian-style bacon, garlic and thyme. Increase heat to medium-high; cook and stir 5 minutes or until liquid is evaporated.
3.Add broth and potatoes. Cover and heat to boiling. Reduce heat to medium-low; simmer 10 minutes or until potatoes are tender. Stir in tomatoes and wine; simmer 5 minutes longer. Remove from the heat.
4.In a covered medium skillet, bring water to a boil over high heat. Add clams. Reduce heat to medium. Cover and cook 8 to 10 minutes or until clams open, stirring occasionally.
5.With tongs, transfer clams to a bowl, discarding clams that don’t open. Line a fine-mesh strainer with dampened paper towels. Pour clam broth through strainer into a 4-cup glass measure leaving any sand behind. Add clam broth to soup. Reheat if necessary.
6.Remove clams from their shells; coarsely chop clams. Add clams to soup; cook and stir 1 to 2 minutes or until heated through. Ladle soup into bowls.

I tried this recipe for confetti clam soup and had many positive comments. Like many good recipes; it is time consuming. However, I enjoy cooking.
