Fresh tropical and southwestern flavors mingle in a sensational three-ingredient mango salsa. From eatbetteramerica.

Start to Finish:30 min
makes:8 servings

1large salmon fillet (about 2 lb)
1/2cup lemon juice
2ripe medium mangoes, cut in half lengthwise, seed removed and diced (2 cups)
2teaspoons chopped jalapeño chile
1/2cup chopped fresh cilantro
1.Heat oven to 400°F. Spray 13x9-inch pan with cooking spray.
2.Cut salmon fillet into 8 serving pieces. Place salmon in pan. Drizzle 1/4 cup of the lemon juice over salmon.
3.Bake 15 to 20 minutes or until salmon flakes easily with a fork.
4.Meanwhile, in medium glass or plastic bowl, mix mangoes, chile, cilantro and remaining 1/4 cup lemon juice. Serve over salmon.

Super Salsa
Love this mango salsa! It's great on the salmon and super on fish tacos and salads. Great twist on a south-of-the-border flavor!

Great recipe
This was an easy recipe to prepare. I would make the mango salsa ahead of time to allow the flavors to meld together better. I also seasoned the fish with a little seafood seasoning to bring out the flavor.

Great recipe, even for company. I used frozen chunks of mango (thawed first) which made the preparation even easier and didn't seem to take away from the flavor. Careful with the Jalapeno -- it can make the dish too hot -- less is better.

A perfect summer dinner
I downsized this recipe for two people and it was perfect. The jalapeno is VERY spicy, so I'd suggest a little less than 2 tbs. if you prefer more mild food. I served this dinner with brown rice and broccoli and it was amazing. The salsa tastes even better if you let it sit for a while. I was so surprised that such simple ingredients could have such a bold flavor. I would recommend this dish to EVERYONE!
