Awesome
These were awesome! Of course I did a few things differently to mix it up a bit. Instead of using 1/2 cup of sugar, I used 1/3 cup and added a little flavored raw honey. Worked really well. Then used a fuji apple which worked just as well as a cooking apple if not better! I added more cinnamon and substituted about 1 cup of wheat flour for the regular. I would definitely recommend if you want to make these even more healthy to use agave syrup as a substitute for the sugar because you will use less of it and it is much more healthier than cane sugar. Sorry, if this was overall a little TMI. In the end I thought this was an overall great recipe and am definitely planning on making it tomorrow! Yum!

Apple-Spice Muffins
Delicious w/changes...I also increased apples to 1.5 c, 1.5 tsp vanilla &1 tsp cinnamon and to make them more healthy I used whole wheat flour, egg substitute & 1/8c apple sauce 1/8c oil. Topping I used 1/2 t cinnamon.

Very good (w/ extra apple)
I followed the advice of others & added in some extra apple when I baked these. I also added in a teensy bit extra of vanilla and cinnamon.
They came out very moist & delicious! We will definitely make these again.

More apple and spices were just what this recipe needed
I gave my 1st batch of muffins a 2. The 2nd batch I give a 4. They have better crunchy outsides and more flavor inside. They still have a slight oily aftertaste, which seems to plague every batch of my muffins, no matter the type.
After the 1st batch, which turned out a bit bland and oily except for where I bit into apple, I decided to change a few things:
Sub whole wheat flour for white, sub egg white for egg, use 1/2 ts cinnamon in the topping, increase cinnamon in the batter to a full ts, add 1/4 ts nutmeg, add 1/2 ts orange peel, increase apple to 1.5 cups, bake for 27 min on center oven rack instead of 25.
The muffins cooked well for 27 min using lightly greased silicone baking cups.

More apple flavor needed
This recipe needs more apple. The muffins were a bit bland except where I bit into an apple piece. The apple made it absolutely delicious It might also need more cinnamon or other spices. I think I'll try 1.5 cups apple and extra cinnamon & spices on the next batch.
I substituted whole wheat flour for white flour, egg white for egg, & 1/2 ts cinnamon for 1/4 ts cinnamon in the topping. The muffins cooked well with 12 lightly greased silicone baking cups for 25 minutes.

delicious!
These muffins came out great! All of the ingredients are usually ones that are kept on-hand, which makes for a great weekend recipe when you don't feel like buying extra ingredients. I doubled the recipe and it worked just fine.
The only things I might try different next time is substituting half of the milk with apple juice so the apple flavor is stronger, and maybe also adding in chopped walnuts to add a nice crunch.
Overall, yummy!
