medium onion, chopped (1/2 cup)

cloves garlic, finely chopped

lb boneless pork shoulder, trimmed of fat, cut into 1 1/2-inch pieces

cup cornmeal

teaspoons ground cumin

teaspoon dried oregano leaves
1/4
teaspoon salt

can (15 to 16 oz) chili beans in sauce, undrained
1
can (14.5 oz) diced tomatoes with green chiles, undrained

cup Progresso® chicken broth (from 32-oz carton)

cups Green Giant® Valley Fresh Steamers™ Niblets® frozen corn (from 12-oz bag), thawed
  • 1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. In slow cooker, place onion and garlic. Top with pork.
  • 2 In small bowl, mix cornmeal, cumin, oregano and salt; sprinkle over pork and mix well. Add beans, tomatoes and broth; mix well.
  • 3 Cover; cook on Low heat setting 8 to 10 hours.
  • 4 Stir in corn. Cover; cook on Low heat setting about 30 minutes longer or until pork and corn are tender.

made this tonight. Thought it was flavorful though the meat was a bit dry. Used a pork loin rather than the pork shoulder due to pricing. The shoulder is way too expensive. All of the ingredients went together well though we decided my chili recipe is preferred. This was very, very similiar to chili though with a different meat used. all in all, not bad.

This took most of the day to cook, but my husband declared that it was "worth the wait." Warm, spicy, and comforting, it was perfect for a cold winter meal. The store didn't have pork shoulder so I substituted boneless country-style ribs. Super, super tender.
