oz uncooked fettuccine
Olive oil-flavored cooking spray

cup chunky-style salsa
1/3
cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn
1/4
cup water

tablespoons chili sauce
1/2
teaspoon ground cumin

can (15 oz) Progresso® black beans, drained, rinsed

cup chopped fresh cilantro
  • 1 Cook and drain fettuccine as directed on package. In medium bowl, place fettuccine. Spray fettuccine 2 or 3 times with cooking spray, tossing after each spray. Cover to keep warm.
  • 2 In same saucepan, mix remaining ingredients except cilantro. Cook over medium heat 4 to 6 minutes, stirring occasionally, until corn is tender.
  • 3 Divide fettuccine among 4 individual bowls. Top each with about 3/4 cup sauce mixture. Sprinkle with cilantro.

Expert Tips

Peas, corn and beans are loaded with plenty of dietary fiber—the soluble kind. Try to eat at least 25 grams of fiber daily.

I loved this dish! It was a great twist on pasta, and the dish was full of flavor. We did change up the recipie by adding more cumin and some chili powder with water. Delicious, and can't wait to have it again
