cups vegetable broth or 1 carton (32 oz) Progresso® chicken broth

cups tomato juice

tablespoon dried basil leaves

teaspoon salt

teaspoon dried oregano leaves

teaspoon pepper

medium carrots, sliced (1 cup)

medium celery stalks, chopped (1 cup)

medium onion, chopped (1/2 cup)

cup sliced fresh mushrooms (3 oz)

garlic cloves, finely chopped

can (28 oz) Muir Glen® organic diced tomatoes, undrained

cups uncooked rotini pasta (4 1/2 oz)
Shredded Parmesan cheese, if desired
  • 1 In 4- to 5-quart slow cooker, mix all ingredients except pasta and cheese.
  • 2 Cover; cook on Low heat setting 7 to 8 hours or until vegetables are tender.
  • 3 Stir in pasta. Cover; cook on High heat setting 15 to 20 minutes or until pasta is tender. Sprinkle each serving with cheese.

Tomatoes contain carotenoids, plant pigments that color them red. Carotenoids are antioxidants that help protect cells from damage.

I love this soup...I make it over the weekend and portion it out into plastic containers when it has cooled. I always have some on hand in the freezer or fridge for a light lunch. My husband and kids think it tastes better as it sits...we are not always that lucky!

This is an AWESOME and EASY receipe and my family loved it!! The only suggestion I have is to NOT use elbow mac noodles as your "soup" will turn into a "goulash"!! Still was wonderful to eat but much thicker! LOL

This will become another family favorite - so easy to make, and the taste is incredible! We all ate at different times tonight - and I did have to add some broth to it later in the evening - but wow - love this!
