Slow Cooker Hot Pork Sandwiches

pork shoulder (3-3 1/2 lb), trimmed of excess fat

tablespoon chili powder

tablespoon red pepper sauce

can (14.5 oz) Mexican-style diced tomatoes, undrained

kaiser rolls, split

slices (1/2 oz each) pepper Jack cheese

leaves lettuce

  • 1 Spray 3- to 4-quart slow cooker with cooking spray. If pork comes in netting or is tied, remove netting or strings. Place pork in slow cooker. Sprinkle with chili powder and pepper sauce. Pour tomatoes over pork.
  • 2 Cover; cook on Low heat setting 8 to 10 hours.
  • 3 Remove pork from slow cooker; place on cutting board. Shred pork, using 2 forks; discard bones. Return pork to slow cooker and mix well.
  • 4 Using slotted spoon, spoon about 1/2 cup pork mixture onto each bun. Top with cheese, lettuce and tomato.

Expert Tips

For a party, place the rolls in a basket and arrange the toppings on a large platter so guests can top their sandwiches as they like.

Don't have the Mexican-style tomatoes? Use a 14.5-oz can of plain diced tomatoes and a 4.5-oz can of Old El Paso® chopped green chiles instead.
