Vegetable Confetti

Toss a colorful veggie combo in minutes and dress it Italian-style. From eatbetteramerica.

makes:4 servings

2medium carrots, shredded (1 1/2 cups)
1medium bell pepper, chopped (1 cup)
1small zucchini, shredded (1 cup)
1/4cup fat-free Italian dressing
1/4teaspoon pepper
1.In medium glass or plastic bowl, mix all ingredients. Refrigerate any remaining salad no longer than 48 hours.
