Minestrone Pasta Salad

This traditional beans-and-pasta dish is on the table in only 20 minutes. Now that's quick! From eatbetteramerica.

makes:6 servings

3cups (7 1/2 ounces) uncooked medium pasta shells
2/3cup Italian dressing
1/2cup shredded Parmesan cheese
2medium carrots, sliced (1 cup)
1medium green bell pepper, chopped (1 cup)
1can (19 oz) Progresso® red kidney beans, drained, rinsed
1can (15 oz) Progresso® chick peas (garbanzo beans), drained, rinsed
1can (14.5 oz) Muir Glen® organic diced tomatoes with Italian herbs or stewed tomatoes, drained
1.Cook and drain pasta as directed on package.
2.Toss pasta and remaining ingredients. Serve warm or cold.

I was surprized by how delicious this actually turned out! I made a few changes, but it worked out wonderfully. Easy to make too :D

Really good recipe. I like the contrast between the crunchy vegetables and the softer beans. It makes for a dynamic dish. I recommend using Newman's Own Italian dressing. It has a really good flavor and adds a really good flavor to the dish.
