Give this nontraditional collard green stir-fry a try. From eatbetteramerica.
Prep Time:10 min
Start to Finish:20 min
makes:6 servings
1tablespoon butter or margarine
2tablespoons finely chopped onion
1to 2 teaspoons grated gingerroot
2lb turnip greens, collard greens or spinach, coarsely chopped
1serrano chile, seeded, finely chopped
1.In Dutch oven, melt butter over medium heat.
2.Cook remaining ingredients in butter, stirring frequently, until onion and greens are tender; drain.
