makes:8 servings (3/4 cup each)

Salad
6medium red potatoes (2 lb), unpeeled
2hard-cooked eggs, chopped
2medium stalks celery, thinly sliced (1 cup)
1medium onion, chopped (1/2 cup)
Dressing
3/4cup reduced-fat mayonnaise
1/2cup fat-free sour cream
1tablespoon yellow mustard
1teaspoon cider vinegar
1/2teaspoon salt
1/4teaspoon pepper
1.Place potatoes in 4-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to low; cover and simmer 20 to 30 minutes or until tender. Drain; let stand until cool enough to handle. Cut potatoes into cubes.
2.In large bowl, place potatoes, eggs, celery and onion; toss gently to mix. In small bowl, mix dressing ingredients until well blended.
3.Add dressing to potato mixture; toss gently to coat. Cover; refrigerate at least 1 hour or until serving time.

potato salad
Loved it! A friend brought the original version and no one seemed to notice the difference between the two. My hubby preferred the healhified version.

Perfect potato salad
This was absolutely delicious! I always read the reviews before trying a recipe and I'm thankful for them because I always get great suggestions. Since I don't like celery, I used pickles instead and that was a great substitute for me. I also added some sliced sweet red peppers. It came out great. This one will be repeated many times!

Love It!
Awesome recipe!!! The only suggestion I have is to cut the dressing in half. I have yet to use it all. I end up throwing some out. I don't like my salad drowing in any dressing. But this potato salad is awesome!!! I'm making it alot.

Ok so I've only made potato salad one other time in my lifetime and it was gross....When I saw this I thought I'd give it a try...AND WOW this was good! I omitted the celery and vinega but then added a bit of pickles and it was soooooooo good! So good that I'm making it again tonight!

Amazing Recipe!
I made this potato salad over the weekend, and actually substituted half of the mayo, with fat free plain yogurt. I also added green onion. It came out fantastic! My husband, who didn't think he liked potato salad absolutely loved this!!

Yummy Potato Salad
Wonderful dressing! I added a few shredded carrots ~ a small drained can of chopped pimentos ~ diced dill pickles ~ little parsley and a little celery seed to the vegetables.

Excellent!
This potato salad is delicious. The creamy dressing competes with my moms. I think this may be my signature potato salad going forward. I love it. Enjoy!!!

Classic Potato Salad
I was looking for a healthy potato salad recipe and came across this one. I had all the ingredients except the cider vinegar. So I improvised and put in a couple of Tbls. of fat free ranch dressing and then I added some chopped cilantro. Everyone at the Bar-B-Que liked it better than my sister's full fat potato salad. Thanks, keep up the good work.

Supreme Salad!
This was THE best potato salad, bar none, (well, except for maybe my mom's...which isn't too "healthified"!)! We loved the addition of sour cream, instead of all the mayo. It made it so creamy. Just because it's healthier doesn't mean you can it tons and tons of it, but oh boy, it was hard not to! We had small portions during the course of a few days and the veggies still stayed nice and crisp and the salad got even more flavorful! A nice little addition that we like to use, is to sprinkle red wine vinegar on top right before serving, then mix it in a bit. Yummy! Thanks so much for sharing this wonderful recipe! A keeper for sure!

Classic Potato Salad
EXCELLENT! Very good potato salad. A hit at the 4th of July party. I added a little bit of chopped pickles to the recipe as my regular recipe also has pickles. Highly recommend this recipe.
