Prep Time:15 min
Start to Finish:40 min
makes:4 servings
1.5pounds of red and yellow heirloom tomatoes
1large garlic clove
1/2red onion, peeled, halved, thickly sliced, and separated into rings
8to 10 fresh basil leaves
Salt and freshly ground pepper to taste*
1.5tablespoons fruity extra-virgin olive oil
3tablespoons balsamic vinegar
4thin slices crusty whole-grain bread
1.Remove the stem of the tomatoes, cut them in half horizontally, and cut each half into 1/2-inch wedges. Put the tomatoes into a bowl, being careful not to lose any of the juice, and add the garlic and onions.
2.Wash the basil leaves, than stack them up and cut them into lengthwise strips. Add to the bowl. Combine salt and pepper to taste with the olive oil and vinegar, pour over the tomatoes, and toss gently. Let the salad stand for about 15 minutes until the tomatoes release their juices.
3.Tear the bread into bite-size pieces and distribute among 4 shallow soup plates. Ladle tomato salad over the bread, allow the juices to soak into the bread for 10 to 15 minutes, and serve.
*Nutrition was calculated using 1/4 teaspoon salt and 1/2 teaspoon pepper.

tasty
a rather tasty side dish, a little strong on the garlic,and i didnt chop the tomatoes up small enough, but will next time. fresh basil is a must.

I add a bit of non or low fat mozarella cheese to this and its like making a really fresh healthy pizza.
