cups uncooked tricolor corkscrew (fusilli) pasta (about 12 oz)

tablespoon olive, canola or soybean oil
1
tablespoon chopped fresh or 1 teaspoon dried basil leaves
1
teaspoon pepper

cups julienne (matchstick-cut) carrots (4 medium)
1
medium yellow bell pepper, cut into 2-inch strips
1
can (15 oz) Progresso® cannellini (white kidney) beans, drained, rinsed
1
can (15 oz) tomato sauce (any flavor)
1
can (14 oz) artichoke hearts, drained, cut into fourths
Grated Parmesan cheese, if desired
  • 1 Cook and drain pasta as directed on package.
  • 2 Meanwhile, in 10-inch skillet, heat oil over medium-high heat. Add basil, pepper, carrots and bell pepper; cook about 3 minutes, stirring occasionally, until carrots are crisp-tender.
  • 3 Stir in pasta, beans, tomato sauce and artichoke hearts. Cook about 5 minutes, stirring occasionally, until hot. Sprinkle with cheese.

Expert Tips

Cannellini beans are a source of iron. Mix beans with pasta for a complete protein and plenty of iron. Iron helps build red blood cells to carry oxygen through the body.

I mixed this with the Italian Turkey and White Beans recipie, and had a delicious, healthy, perfectly blended 1 dish meal that was fast and easy to make! It doesn't get any better than that!

Eh....not the best. Loved the beans but not enough sauce over all and although I love carrots they added a strange flavor to this meal that almost didn't mesh.

This came out really good. My husband and 7 year old both really liked it, eventhough my husband wishes it had meat. But the kidney beans add a nice texture and taste in place of no meat. I ended up using regular red kidney beans and it was good.
