2 2/3
cups uncooked whole wheat penne pasta (8 oz)
2
teaspoons olive oil
1
medium onion, chopped (1/2 cup)
4
cloves garlic, finely chopped
1 1/2
cups grape tomatoes or halved cherry tomatoes
2/3
cup finely chopped cooked ham
1/2
cup dry white wine or water
4
cups fresh spinach leaves
2
tablespoons finely shredded Parmesan cheese
  • 1 Cook and drain pasta as directed on package, omitting salt.
  • 2 Meanwhile, in 10-inch nonstick skillet, heat oil over medium heat. Add onion and garlic; cook 3 to 4 minutes, stirring occasionally, until onion is tender. Stir in tomatoes, ham and wine. Cook and stir until some of the wine has evaporated.
  • 3 Add spinach and pasta; toss gently. Sprinkle with cheese.

Expert Tips

By dicing the ham into small pieces, the flavor penetrates every bite without adding too much sodium.

At 3 carb choices, this is almost a meal in itself—just add a glass of skim milk.
